Impossible Pie. Impossibly Easy (Sweet)

This post is part of my unofficial “I hate cooking, but do it anyway, so make the most of it I guess, but I still don’t really like it” series.

I like easy recipes. I like recipes that are for the most part healthy (yeah – so maybe this post doesn’t really fit), relatively inexpensive (teenagers eat LOTS), quick and are hard to f$&k up basically.

Anyway, I’ve finally found an Impossible Pie recipe. You don’t know what Impossible Pie is? What?!?! Well for the uninitiated, it’s a pie where you basically throw all the ingredients in a bowl, pour it in the pie dish, cook and eat.

And this one is a crazy easy sweet custard pie.Here’s the recipe I’ve used:

4 Eggs
1/2 cup Melted Butter
1/2 cup Plain Flour
1/2 cup Sugar
1 cup Coconut
2 cups Milk
Vanilla Essence
Turn on the oven and then cook it til it’s springy like a cake. Don’t ask me the temperature, I never bother with those niceties.
This recipe come from Best Recipes, but I have reduced the amount of sugar. Even I nearly fell over from a sugar coma with a full cup. WHOA.
Try it. Kids will LOVE it.

  1. It is a beauty, seems to always be at teachers' morning teas, that and mock chicken dip and tim tams. It always goes first. Might have to make one this weekend. Refusing to halve the sugar, though.

  2. I finally got all the ingredients together AT THE SAME TIME and made this. I kept forgetting one thing, but kept buying more coconut.
    So I made a decent weekend size slab of it – I reduced the sugar but spread lemon curd on top when it was warm and it went kinda syruppy oozy. Delish!
